Who else cooks a full dinner/lunch for the next day, at 3-4am? This was a little bit of an experiment which turned out delicious. Made 4 full chicken legs (into thighs and drumstick, skinned and separated), marinated in a hickory maple sugar BBQ sauce. That got pan cooked in the sauce until some of the meat started peeling from the bone, and then drained excess sauce and pan seared to give that extra browning on both sides. To the side of that we have a mix of seasoned kale, red and green grilled peppers, carmelized onion, white rice and to try something new, I added crumbled feta and a chunks of fresh mozzarella. The chicken turned out juicy and delicious, although I was a little suprised at how much different the pieces seem to turn out versus the skin on. Think I'm peeling all my bird for a while. The kale side I was a little unsure on, but the feta added just a touch of saltiness to it (I rarely if ever add salt to my food these days), and the mozz melted into a stringiness which tasted delicious and still didn't bind it up at all. Next time I may do smaller pieces of mozzarella though, to better distribute the flavor and texture.
