What to do with leftover egg whites? Make tofu! Sort of... whisk egg whites with water (ratio 1:1.5), strain into a dish, steam in boiling water for 2 minutes. Turn off the heat, leave covered and let egg cook in residual heat for 20 minutes and you get a silken smooth texture like tofu. Top with finely diced chicken stir fried with oyster sauce, sesame oil and Shaoxing wine plus finely chopped spring onion and coriander.
